In this paper, we refine the conceptualisation of terroir to clarify the integrated relationship between its physical-natural and socio-cultural constitutive domains through place, history and the senses. Using this reconceptualization, we theorise terroir's unique and powerful contribution to sustainability through the integration of place and sensory, visceral experience. In turn, we derive six propositions that describe the relationship between terroir and business actions, with clear implications for the sustainability of rural businesses and regions.G.L. was supported by the Australian Government Research Training Program; a Wine Australia PhD Scholarship [AGW Ph1604]; an Australian Government Endeavour Leadership Program Postgraduate Scholarship [#6391_2018]; a French Government Eiffel Postgraduate Scholarship (#919863F); a Wine Australia Travel Grant [WAT 1705], an International Organisation of Vine and Wine (OIV) Research Grant, and a Gowrie Scholarship.application/pdfen-AU© 2021 Elsevier Ltd.Rural sustainabilityAlternative foodPlaceVisceralterroirConsuming the earth?
