We investigated the free volume variations (size and distribution) within sorbitol plasticized high amylose bionanocomposites of different formula where the interactions among sorbitol, amylose and hydrophilic montmorillonite nanoclay (MMT) modified the crystallinity and therefore, the free volume of the matrix.
