Anomerisation of Fluorinated Sugars by Mutarotase Studied Using 19 F NMR Two-Dimensional Exchange Spectroscopy

Five 19F-substituted glucose analogues were used to probe the activity and mechanism of the enzyme mutarotase by using magnetisation-exchange NMR spectroscopy.
