MDs [monoacylglycerols (MAGs) and diacylglycerols (DAGs) mixture] are widely-used emulsifiers in specialty fats industrial production. An enzymatic production of highly unsaturated MDs (HUSMDs) and its effects on the storage stability of a palm oil-based shortening system are reported.
